What is Brothless Ramen?
Brothless ramen — sometimes called mazemen, abura soba, or yakisoba depending on the style — strips out the broth and lets the noodles and toppings carry the flavor on their own. The noodles are tossed in a seasoned oil or sauce, and the bowl eats more like a noodle salad than a soup.
Our Naked Ramen is our own take on the brothless format. Vegan-friendly curly noodles are topped with a Tatsu Egg, scallions, crunchy panko breadcrumbs, and finished with a drizzle of sweet kuromitsu glaze. Squeeze the lime over the top before you eat — that is the move.
It is unlike anything else on the menu, and unlike most ramen anywhere. Available at all four LA locations.

What does Naked Ramen taste like?
Naked Ramen is sweet, savory, and crunchy all at once. The noodles are dressed in seasoned oils, the kuromitsu glaze adds a clean sweetness, panko adds crunch, and the lime brightens the whole bowl. It is brothless ramen done in a uniquely Tatsu way.
Can I add broth to my Naked Ramen?
Yes — at most locations you can add a side of our Hippie broth as an off-menu addition. Just ask the team. The Naked Ramen is designed to be eaten brothless, but if you want to play, the broth pairs well.
Is Naked Ramen vegan?
It can be. Order it Vegan and No cheese at the kiosk and it is vegan-friendly. By default it includes a Tatsu Egg which is not vegan, so you will want to swap or remove that if you are going strict vegan.
